This weekend, inspired by some of our Mexican chefs, we’re bringing a true Mexican breakfast classic to brunch in Squamish with our take on Authentic Huevos Rancheros. Two sunny-side-up eggs sit on a crispy deep-fried tortilla, layered with refried beans (slow-cooked with bacon fat for incredible flavour), salsa verde, creamy avocado, and feta cheese. Finished with pickled red onions, fresh cilantro, and served with our crispy hash browns.
